Working with our expert chef, Dan Graham, and an array of fresh, seasonal ingredients, you'll learn how to prepare some of the best fish available.
Thai, Malay and Indonesian Cuisine are very similar, in particular some of the regional traditions.
It has also been influenced by Chinese, Indian, Thai and many other cultures throughout history, producing a distinct cuisine of their own.
Many dishes revolve around a Rempah, which is a spice paste or mix similar to an Indian Masala. Rempahs are made by grinding up fresh and/or dried spices and herbs to create a spice paste which is then sautéed in oil to bring out the aromas.
Fiona will talk about the background to the dishes you will be cooking and chat about the cuisine and culture of Thailand, Malaysia and Indonesia. Then, under the guidance of Fiona you'll prepare a selection of dishes. Examples of dishes that may be included:
- Nasi Goreng (fried rice dish)
- Seafood and Coconut Laksa Lemak
- Malaysian Chicken Rempeh
At the end of the class, you'll be able to sit down and enjoy your dishes or take them home for your friends and family to enjoy (please bring some containers to put your food in).
All ingredients are provided as well as recipe sheets to take away at the end of the session.
