Patisserie Course

Create stunning individual desserts and petit gateaux with Shona Sutherland using professional skills, to impress your guests.

Techniques include:

  • Choux with Craqueline
  • Mousse
  • Glazes
  • Joconde and sable bases
  • Layered Opera cake
  • Fruit inserts
  • Crème parisserie
  • Mousseline
  • Crème au beurre
  • Garnishes

Not only do you get to take home a variety of the stunning creations, you'll have the recipes, new skills and confidence to tackle them in the future!

(NB, types of desserts may be subject to change...and if they are, it will only be for the better!)

Although you don't need any prior experience of the particular patisserie skills, general kitchen knowhow is required for this intensive and busy course.

Recipes will include use of allergens SOY, MILK, NUTS, EGG, GLUTEN/WHEAT (perhaps PEANUTS, SULPHITES and SESAME).

AZO colours and small amounts of alcohol in some recipes will also be used.

White cardboard will be supplied, but you are encouraged to bring something more substantial, eg. several Tupperware boxes.
