Learn how to prepare and cook a selection of fabulous Mexican dishes, with our fabulous chef-tutor, Jen Morrison.

Immerse yourself in this wonderful, spicy cuisine, looking at and tasting typical ingredients used in Mexican cooking. Jen will tell you all about her background and the history of this wonderfully piquant cuisine.

Working 'hands-on' in our purpose-built kitchen, you'll be preparing and cooking your dishes, sampling as you go.

Examples of dishes that may be prepared:

  • Potato, serrano chilli and cheese empanada
  • Oaxacan-style spiced pumpkin and cheese tamales
  • Ancho beef tamales
  • Grilled corn and cactus tacos with avocado cream
  • Lamb barbacoa tacos
  • Yucatec-style pork in achiote with grilled plantain
  • Chiles rellenos: cheese filled and battered poblanos in mole rojo
  • Huevos rancheros (usually for brekkie but great family-friendly main)
  • Squash & quinoa with black beans and epazote

All ingredients are provided as well as recipe sheets to take away at the end of the session. 

We'll provide an apron to work in but if you'd prefer to have your very own, high-quality, embroidered YORK Cookery School apron, they are available to buy. Simply add one to your order and we can post it to you of just give it to you when you come to the class.
