Cocoa Butter Decoration by Hand & Airbrushing

If you have chocolate making experience from either the Introduction or Bars and Bites class, this is the next step to refine your work. This class is fully hands-on, with refreshments and a lunch provided.

What do we cover?

  • Theory of cocoa butter decoration which cocoa butter, which colours to use, temperatures, environment.
  • Practical of decoration of moulds by hand
  • Practical of decoration of moulds with airbrush
  • Airbrush presentation from Graphics Direct
  • Handmade transfer sheets
  • Ganache, gianduja, caramels for fillings.
