Chocolate making with Andrew Thwaite

Join expert chocolatier, Andrew Thwaite, for our introduction to chocolate making and an ideal opportunity to create some unique creations for Valentine gifts.

Andrew will reveal how we get from a cocoa bean to a chocolate bar and help you to make sense of all the different grades and bean varieties available to buy during an introductory tasting session.

Under his expert guidance, you’ll then learn the principles of chocolate tempering and have a go at the various methods you can use at home, including using a marble slab, using a microwave and the seeding method.

You’re then ready to turn your hand to making a number of creations, including:

  • Handmade Rochers and Mendiants
  • Hand-dipped and rolled chocolate truffles
  • Moulded chocolate shells containing a ganache-based filling
  • A decorative edible chocolate box to house everything you have made.

You'll be working in pairs, so why not bring a friend with you and have a fun day out!!

Refreshments will be available throughout the class. You will take away lots of new skills and printed recipe sheets. We’ll also provide you with some useful contacts for sourcing equipment and chocolate-making supplies.

We'll provide an apron for you to work in but if you'd prefer to have your very own, high-quality, embroidered YORK Cookery School apron, they are available to buy. Simply add one to your order and we can post it to you of just give it to you when you come to the class.
