Our chefs and tutors
Florian started his apprenticeship as a pastry chef in the north east of France where he earned his master diploma in pastry. He worked at the Thiebaut patisserie shop (relais dessert) which is considered to be one of the best patisserie shops in the world. After moving to Paris to build his career as a patissier he worked for 4 years as a chef at Daubos ,a luxury patisserie shop in Versailles.
Florian has taken part in many competitions and won the prestigious Charles Proust competion (prix du public and 3rd place) in 2006 in Paris. And this year, has been named the overall winner of the UK Pastry Open meaning, in 2017, he will be representing the UK in the Coupe du Monde de la Patisserie.
He is an expert in luxury and modern French pastry and has designed many "fashion cakes" for the trade press (le Journal du Patissier) in France.
